Sunny Carrots & Wilted Arugula

Bursting with orange flavor & done in 15 minutes!




What makes a great side dish? It needs to be packed with flavor, nutrients and pleasing to the eye. Oh, and quick too please! Our Sunny Carrots and Wilted Arugula fits the bill.



We took carrot discs, sautéed them in butter to brown them slightly. Then steamed them in orange juice until they were firm and tender. Orange zest and peppery arugula amp up the flavor even more.


The result is a veggie side dish that bursts with color and is ready in less than 15 minutes.


We suggest serving it with our Crispy Roasted Chicken or our Sizzling Skillet Venison.



 


Sunny Carrots & Wilted Arugula


Recipe Ingredients

Everything you'll need for this delicious recipe is below.


1 lb. whole carrots peeled and cut into 1/8 in. disc

3T butter

1 orange zested and juiced

1/2 t salt

1/4 t pepper

3 cups fresh arugula



Preparation Instructions


1. In a large heavy duty pan, heat butter on medium heat

2. Add sliced, peeled carrots.

3. Cover with a lid and cook for 5 minutes, stirring once.

4. Zest the orange into the carrots.

5. Cut orange in half and squeeze all the juice into the pan.

6. The fruit sugar from the orange juice will help the carrots to brown a little more.

7. Cook until firm but tender and slightly brown.

8. Remove carrots from heat.

9. Add 2 cups of arugula to carrots and mix.

10. Before serving, add the last cup of arugula. This makes some more of the arugula more wilted than others.
