Royal Scrambled Eggs

Queen Elizabeth's favorite scrambled eggs -- easy and oh so good!




What dish is grand enough for British royalty, but simple enough to make while binging Premier League weekend football matches or episodes of the hit TV series Ted Lasso set in London?


This recipe takes simple scrambled eggs and elevates them to royal heights! People are fascinated by the British Royal Family – including what they eat. (Garlic and shellfish are no-no’s.). The late Queen Elizabeth had mostly yogurt, cereal and toast along with Earl Grey Tea for breakfast. When she wanted more protein, she opted for scrambled eggs. Her version has two secret ingredients that I had never tried in scrambled eggs before.

Scrambled eggs can be wonderfully sublime. If not done right though, they can also be a rubbery dry blob, especially when it’s served on steam tray on a breakfast buffet.


Since Queen Elizabeth had her own royal chefs, we’re assuming her breakfast tasted less like the school cafeteria version.


Still we're leaving nothing to chance here. We even went one better than the Queen with our version of Royal Scrambled Eggs. Instead of using milk like the royal chefs, we used sour cream. The difference is huge – silky and tangy eggs.


We also used the French method for making scrambled eggs: Low, Slow and Stir. Low heat, slow cooking time and stirring almost constantly. You’ll be amazed at the creaminess.


So, what are the Queen’s two ingredients? Lemon zest and nutmeg. Nutmeg pairs perfectly with quiches and frittatas. And I love a citrus zing in just about anything but hadn’t thought to micro plane some zest into my morning eggs.


The Queen was right! This version of scrambled eggs is fit for royalty. We feel sure this is a tradition that the entire Royal Family -- King Charles III, Camilla, Kate, William, Meghan and Harry -- will want to carry on.


Royal Scrambled Eggs are also perfect for your next brunch for friends.


They are also great for weekend morning and early afternoon Premier League games broadcast in the U.S. Breakfast and binging football games...a perfect match!

This dish is also comfort food for a weeknight dinner at home. You could make this while watching Ted Lasso, the TV series about an American football coach who goes over to England to coach the fictional AFC Richmond soccer team. Coach Lasso may eat eggs, but doesn't appreciate British tea. Maybe he's never tried our Earl Grey tea in a Lovable London Fog – either hot or iced.

Royal Scrambled Eggs


Recipe Ingredients

Everything you'll need for this delicious recipe is below.


Makes 2 servings


6 eggs

2 T (heaping) of sour cream

1/4 t nutmeg

2 t lemon zest

2 T butter (divided in half)

1 T chives for garnish on top

¾ t salt

½ t pepper


Preparation Instructions


1. Snip chives with kitchen scissors.

2. Put 1 T butter in a non-stick pan and turn on low heat.

3. Crack the eggs into a bowl and add sour cream. Mix with a fork.

4. Zest the lemon and set aside.

5. Once butter is melted, pour egg mixture into pan.

6. Let set 1 minute.

7. Sprinkle in lemon zest.

8. Then begin slowly stirring the eggs with a spatula for about 8 minutes.

9. Add 1 T butter and stir until its melted.

10. Turn off heat. Eggs should be custardy and slightly underdone because they'll continue

cooking from the heat of the pan.

11. Sprinkle with salt and pepper

12. Remove from heat and sprinkle with nutmeg.

13. Spoon onto warmed plates.

14. Sprinkle chives over each.

15. Serve immediately.
