Game Day Graze Board

Savory, salty and sweet all on one platter!




My niece Jess makes this wonderful platter for gatherings. It can be put together in 10 minutes and is always a hit. It boasts smoky, salty, savory, briny, creamy crunch and sweet flavors all on one graze board. Rosemary adds a pine-scented pop of green.


If you don’t have some of the ingredients, it’s easy to substitute others.


This platter has the right combo of cheeses – a hard cheese, a smoked cheese and a couple of creamy options. Black pepper Toscano is a wonderful mashup of a farmstead cheddar and a nutty aged parmesan. Burrata is a jiggly cheese that’s softer than a fresh mozzarella. Here’s, it’s topped with salt, cracked pepper and a balsamic glaze.

Boursin is a soft herb garlicky spread that’s unlike the rest of the cheese offerings. It holds its own against the briny olive tapenade, thinly sliced prosciutto and salami. Green grapes and an assortment of crackers create help create a charcuterie and cheese board with a multitude of taste combinations.


 

Game Day Graze Board


Recipe Ingredients


1 box Boursin cheese

1 8 oz wedge black pepper Toscano

1 8 oz. container of burrata (drained and dry)

1 wedge smoked gouda

2 T balsamic glaze*

4 oz of prosciutto

4 oz of salami

4 oz sopressa

1 small container olive tapenade

1 bunch of grapes (washed and dried)

1 sprig of rosemary (for garnish)

1 box of assorted crackers


Preparation Instructions


1. Select medium to large serving board.

2. Arrange cheeses artfully on platter.

3 With the gouda, go ahead and chop some pieces off to make it easier to serve.

5. Drizzle balsamic glaze across the top of the burrata.

6. Fan salami around one of the cheeses.

7. Add prosciutto and sopressa around cheeses.

8. Add crackers and bunch of grapes.

9. Garnish with rosemary sprig.
