Butter makes everything better -- especially steak! Ask Walker Hayes!
When the viral hit Fancy Like was just beginning to take off, I asked singer/songwriter Walker Hayes to come over to my kitchen and do some recipes from the food he mentions in the song. He agreed. During that shoot, I suggested he make a compound butter. He didn’t know what it was but was game to try it.
But let’s back up in case during the pandemic, you somehow missed the Fancy Like phenomenon…
Walker co-wrote a country rap song that tells how he wants to occasionally upgrade and take his sweetheart someplace special like “Applebee’s on a date night”. The song came from memories of Walker going there as a kid but not being able to order the steak because it was too pricey. He settled for quesadillas.
Walker and his teenage daughter created a dance on a porch to go with the song and posted it to Tik Tok. That spawned a viral craze with people posting themselves doing the dance. Walker’s hit stayed an incredible 18 weeks at number one on the Billboard Charts. Later, Walker created another video in LA with pop star Kesha for the song.

Applebee’s had taken their Oreo Shake off the menu but brought it back because of the demand the song generated. By the fall of 2021, the song – and Walker -- were also featured in its commercials.
But rewind to that summer...we had so much fun in the kitchen that day, even if he did catch one of my cloth napkins on fire! He burnt the steak just a little, so I suggested we make a compound butter to go with it.
Compound butter makes any slab of beef taste like a fancy steakhouse steak. I went to my herb garden off the porch and cut some rosemary and thyme. Walker loved the smell of piney scent of the rosemary. I showed him how to make the butter recipe and we filmed it.
Later we moved the dining chairs aside and Walker did the dance again, getting hundreds of thousands of views on that version. Then we all ate steak!
Compound butter is great on fish, steak, pork and even on our Sizzling Skillet Venison Tenderloin. It may make your meat taste as good as “Applebee’s on a date night”.

Fancy Like Compound Butter
Recipe Ingredients
Everything you'll need for this delicious recipe is below.
1 stick compound butter (softened)
1 t salt
1 t pepper
½ t garlic powder or 1 t fresh garlic minced
1 T fresh snipped rosemary
1 T fresh thyme
Preparation Instructions
1. In a bowl with a fork, mixed the butter and seasonings.
2. Snip the rosemary finely with a pair of kitchen scissors. Discard the stalk. (If it’s cold outside, I put them in my fireplace so the next fire smells good.)
3. On the thyme, strip the leaves and discard stems.
4. Add herbs to butter and mix.
5. Spoon onto hot meat once it’s removed from the grill or skillet or as in the Sizzling Skillet Venison Tenderloin, add during the cooking process.
