Everything-But-The-Kitchen-Sink Stew

A hearty stew that makes you feel virtuous for cleaning out the fridge!

Sometimes a heartwarming stew is the perfect cozy end to the day. For this one, I had veggies I needed to use in the fridge and some pork I found on sale at the grocery. That's what's great about stew. It can accommodate almost anything.


Most people never cook them, but they're delicious!

I had a bag of radishes that needed using and tossed them into the stew. I like the peppery bite of fresh radishes in salads. Most people never cook them, but they're delicious! They have a surprising mellow sweetness when roasted or tossed into a stew.

I also had two bulbs of fennel, that crunch, celery-like vegetable with a slightly licorice taste. It's wonderful in a stew. I also chopped up carrots, an apple (with the skin on), mushrooms, celery and onions.


I used two spices that have become go-tos -- cardamom and garam masala. Both of these spices are so versatile, you'll find plenty of other recipes to use them in. Cardamom is used in Indian-inspired dishes from everything from curry to ice cream. It also has tons of health benefits including fighting cancer and cavities. Garam masala is a combination of spices including cinnamon, mace, nutmeg, coriander seeds and many others. A shake in almost any meat dish makes it better. It's also great in quiches or egg dishes.


When you enjoy this stew, you'll feel goo that you made a satisfying dish for the family and cleaned out your fridge at the same time!

Cooking Tips: I never put potatoes in a stew. If you want to serve this stew on top of mashed potatoes or polenta, it would be delicious. I find putting the potatoes in the stew, just makes it mushy and mealy. I also like to sauté mushrooms, so they are a little brown and dry. It intensifies the flavor. Putting them in raw into a lot of liquid makes them get well...waterlogged.

Everything-But-The-Kitchen-Sink Stew


Recipe Ingredients

Everything you'll need for this delicious recipe is below.


Serves 8 depending on portion size


1/4 c parsley (added just before serving)

2 lbs pork (boneless chops or roast cut in cubes)

1 c chicken or beef broth

1 8 oz. package radishes (halved or quartered)

2 bulbs fennel (roughly chopped)

1 whole head celery (chopped)

3 onions (chopped)

4 cloves garlic (minced)

2 8 oz. package mushrooms (any type roughly chopped)

4 T bacon fat, butter or olive oil

4 carrots (peeled and chopped)

1 28 oz. crushed tomatoes

1 large apple (unpeeled but chopped and seeded)

1 t Dijon mustard

1 T Worcheshire Sauce

2 T fresh sage (optional)

2 T fresh thyme

2 t garam masala

1 t cardamom

1 t salt

1 t onion salt

1/2 t red pepper flakes

1 T fresh jarred horseradish

1 t smoked paparika


1 c parmesan (for topping)



To garnish:

Fresh parsley, parmesan cheese or croutons



Preparation Instructions


1. Preheat oven to 325.

2. In a large oven-proof Dutch oven, add 4 T bacon fat, oil or butter.

3. Add chunked pork and cook on medium heat stirring occasion unitil meat begins to brown.

4. Remove meat and set aside.

5. Add mushrooms into existing fat and sautéed for about 5 minutes stirring occasionally until mushrooms are brown and liquid has cooked out.

6. Add onions to mushroom mixture and sautée.

7. Once onions are tender and browning slightly, add garlic and cook for 1 minute.

8. Then add remainder of the stew ingredients except for the fresh parsley and parmesan.

10. Transfer Dutch Oven and place in preheated oven.

11. Cook for two hours, giving it a stir halfway through the cooking process.

12. Stir in chopped parsley before serving.

13. Top each portion with parmesan cheese and garnish with more parsley.
