Cowboy Coffee Chicken Wings

Chicken Wings…that Game Day staple just got a makeover! What makes our Cowboy Coffee Chicken Wings so special? They’re amped up with coffee, brined with yogurt and doused with a cherry preserve barbecue sauce. And they’re easy too! Moist, a tad sweet with a hint of coffee and smoke. They can be done in the oven in 40 minutes.

Smoky cherry barbecue sauce makes these special!

Then we have the perfect accompaniment -- Buck Dancing Bleu Cheese Dip. Or make our Jake’s Horsey Sauce. Both will be dunk-worthy additions to these wings.

Now on this recipe, you can skip the brining step, but we think the yogurt brine we created makes these wings tender and flavorful. And the smoky cherry barbecue sauce makes these Cowboy Coffee Chicken Wings worthy of their own Super Bowl ring!


 


Cowboy Coffee Chicken Wings


Recipe Ingredients

Everything you'll need for this delicious recipe is below.


5-6 lbs of wings (approx. 15 wings cut at the joint to make 30 wings total)

Salt

Pepper

Garlic Powder


Yogurt Brine


¾ c plain whole milk yogurt

¼ c soy sauce

½ c green or red salsa

1t salt

¼ c olive oil


Cowboy Coffee Barbecue Sauce


¼ c cherry jam or preserves

¼ c bottled BBQ sauce

1 t instant coffee granules (make sure it’s instant; Instant coffee granules easily dissolve in liquid.)

1 lime (zest and juice)

1 T Siracha (or Tabasco)

1/2 t salt


Preparation Instructions


1. Cut chicken wings at joint. (If you haven’t done this, check out a video on how to do it.) Chickens have three segments on each wing – the drumstick-looking portion of the wing, the actual wing with the two parallel bones and then the third section which is a bony pointed tip that has no almost no meat on it. You want to cut off the bony tip section at the joint and then discard it. Then cut into the next joint between the drumstick and wing portion. Those are the two sections that you’ll cook.

2. Mix all brine ingredients together in a large mixing bowl or casserole dish

3. Add chicken wing pieces. Cover container with plastic wrap.

4. Let marinate in the refrigerator several hours or preferably overnight.

5. When ready to cook, preheat oven to 400. Use convection setting on your oven if you have it. If not, regular setting is fine. You may want to cook the chicken a few minutes longer.

6. Remove chicken from brine. No need to dry it off but shake off any excess. Having a thin coating of marinade on the wings is fine. You don’t want the wings sitting in a pool of marinade on the cooking tray. Otherwise, the wings won’t get crispy.

7. Place chicken pieces on two large, greased cooking trays. (Spray cooking sheets with cooking spray. You may prefer to cover the tray instead with aluminum foil.)

8. Sprinkle wings with generously with salt, pepper and garlic powder

9. Bake for 30 minutes.

10. Make Cowboy Coffee Barbecue Sauce by zesting and juicing lime. Then add all ingredients into a bowl. Mix with a spoon.

11. After wings have cooked for 30 minutes, remove from oven.

12. Brush one side of wings with Cowboy Coffee Barbecue Sauce.

13. Cook 5 minutes.

14. Remove wings from oven and flip the wings over and baste other side with Cowboy Coffee Barbecue Sauce.

15. Put back in the oven and cook for 5 more minutes until brown.

16. Serve with a side of Jake’s Horsy Sauce or Buck Dancing Bleu Cheese and a separate small bowl of Tabasco or Louisiana Red Hot for those who want even more heat.
