We promise too much of a good thing is a good thing! This is one of the most versatile dishes you can make. Even people who swear off raw onions pile these on their plate.
You can use regular sweet onions (Think Vidalia, Texas Sweets, Maui, or Walla Walls). I like the purple ones because they look great on the table.
For the balsamic vinegar in the recipe, a syrupy variety works best. If you like your onions a little sweeter, then add a dash more sugar or vinegar.
Carmelized Purple Onions
Recipe Ingredients
Everything you'll need for this delicious recipe is below.
Serves 4-6, depending on portion size
2 lbs. purple onions (approx. 5-6 medium to large ones) peeled and sliced
3 T butter
1 T olive oil
1 1/2 t sugar
3/4 t salt
1/2 t pepper
3 T balsamic vinegar
Preparation Instructions
1. Melt butter in a large cooking pan or skillet.
2. Add olive oil.
3. Over medium low heat, add onions and toss to coat with butter/oil.
4. Stir every couple of minutes so the onions soften but don't burn or stick.
5. After they've cooked about 8-10 minutes, add sugar and vinegar, pepper and half the salt.
6. Cook a few minutes.
7. Sprinkle with remainder of salt before serving.
